Not too many restaurants are lucky enough to have the warm, loving embrace of a grandmother, but luckily for Zaytinya, Greek culinary figure and cookbook author, Algaia Kremezi, has served as a key, influential presence since it opened its doors in 2002. This past January, we welcomed Aglaia for the feast of choirosphagia – an annual celebration that honors the tradition of pig-slaughtering that takes place on the islands of Greece. Here, she explains one of the many dishes that result from this mouth-watering occasion with a recipe for Hirinopita, a traditional pie made of phyllo dough and filling. We are thrilled to welcome Aglaia Kremezi, Greece’s foremost cooking authority, on February 3rd for an exclusive, one-night only, 5-course dinner that she will prepare with Head Chef Michael Costa. Featuring Autumn Olive Heritage Pork, each course will be paired with wines by our Master Sommelier Andy Myers.
Before opening Zaytinya, José Andrés traveled to Kea, Greece to spend time in the kitchen with Aglaia Kremezi. Although the two had never met, an instant friendship was born from their shared passion for authentic cuisine, and to this day, Aglaia is a constant influence on Zaytinya’s menu.

Since arriving to the United States over 20 years ago, José Andrés has helped promote the cuisine and culture of his native Spain. In May 2012, he was named Dean of the Spanish Studies program of the International Culinary Center, the first and only program of its kind offered in the United States.
The ICC, originally founded as The French Culinary Institute, is a world leader in culinary education and has graduated over 22,000 alumni worldwide. The unique program was designed by José Andrés, and Colman Andrews, a leading expert on Spanish cuisine, author of Catalan Cuisine, co-founder of Saveur and editorial director of www.thedailymeal.com
In addition to receiving a world-class training in traditional and modern Spanish cuisine, students will learn Spanish culture, history, geography and culinary terminology, making it the most authentic and comprehensive Spanish culinary program in the country.
